Pepper Chicken

Different Chicken


  • 1 red bell pepper, sliced thin
  • 1 orange bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 15-20 cherry tomatoes, halved
  • My House Seasoning
  • 8 frozen chicken breasts, thawed overnight in fridge

**cut recipe in half unless your want leftovers for lunch***


Chicken can still be part frozen, its ok.  Place chicken into an oiled Lodge cast iron dutch oven with lid.  Season chicken with seasoning, cover and place into a cold oven, turn on to 350 degrees and cook for 30 minutes.

At 30 minutes, take out and add peppers and tomatoes and more seasoning if you like.  Place back into oven and cook on 250 degrees for another 30 minutes or until you want to serve.  Remove and drain off excess water and serve.

Serve with seasoned long grain wild rice for a nice compliment. Would be good over some fresh spinach also.

Italian Red Potatoes

Red potato yummy..



Boil potatoes whole till fork pierces easily or skin starts to peel.  In a separate pan saute onions with a little spray oil till tender.  Drain potatoes, use a knife and while in strainer, cut at potatoes to make smaller pieces.  Place back into pot.  Add all other ingredients and stir still well blended.

Serve Warm.

Slow Cooker Pork Chops 2

Slow Cooker Pork Chops with a creamy sauce.



Spray slow cooker crock with oil.  Place chops in crock while sprinkling with my house seasoning. Pour in cooking wine.  Add all other ingredients, slightly blending the seasonings into the soup as you spread out the soup on top.  Slow cook on low for 6-8 hours.

All ingredients can be added to crock the night before and refrigerated till morning and then put on to cook before you leave for work.

Serve with Italian Red Potatoes

Tomatillo Salsa

Excellent salsa for a gringa, freezes beautifully for large batches at a time.


  • 20 tomatillos, quartered
  • 4 garlic cloves, not peeled
  • 1 lg onion, quartered
  • 3 pablano peppers
  • 1/2 bunch cilantro
  • 1 can chipotle peppers in adobe sauce, such as San Marcos Chipotle Peppers in Adobo sauce (HOT, you may omit or find a mild version)


Broil the first 4 items until charred, approximately 15-20 min. You might turn them about halfway through if you want.  Remove from oven and cool for a few minutes before next step.

In a food processor, chop all ingredients till well chopped and blended.

Serve warm or cool.  Makes a great additional flavor to any dish.  This makes quite a bit, but you can freeze what you don’t need till you do.
