Do it yourself spin on the oven roasted potato mixes, seasoning is versatile.
Diced potatoes, place in a large bowl or zipper bag. Add oil and seasoning, toss thoroughly till well coated. Spread evenly onto a spray oiled cookie sheet and bake on 350 degrees for 20-25 minutes.
*Any combination of seasonings can be used to acquire a desired flavor.
- 1 pound Pork stew meat
- 1 can fire roasted diced tomatoes, if your local store doesn’t have generic brand then try Hunt’s brand.
- dried parsley or fresh
- garlic powder (I use Tone’s garlic powder)
Pour 2-3 tbsp oil in a skillet, heat up and add pork. Cook pork till not pink, sprinkle parsley over top then garlic powder. Drain tomatoes then add to pork, cook till heated on medium.

In a deep skillet, brown the meat. While meat is browning, you can cooked the carrots in water and drain before adding to meat mixture, or thaw carrots before preparing dish. When browned, add the stuffing mix and the required amount of water on the box.
Add carrots to meat and stuffing when the stuffing has soaked up the water, heat till all warm. Serve
*if you can’t find cranberry flavored stuffing, try using regular flavored stuffing and halved fresh cranberries or dried cranberries.
