Roasted Chicken and Spaghetti Squash

Ingredients:

Instructions:

In a spray oiled glass dish bake the chicken seasoned with the bacon flavoring on 350 for 25-30 minutes or till chicken is done. When the chicken is done, use and fork and knife and cut chicken up into bite size pieces.

Cut a spaghetti squash in half and bake on a cookie sheet for 25-30 minutes on 350 degrees.

Cook frozen green beans according to directions on pkg.

Once both the squash and the chicken are done, scrape one half of the squash into the dish with the chicken with a fork. Stir in the beans that are drained and toss all together, sprinkle with some more seasoning if desired. Serve.

If needed place into the oven and warm back up for about 15-20 minutes on 350 degrees.

Seasoned Pork with Spaghetti Squash

Ingredients:

Instructions:

In a slow cooker, cook the pork seasoned with the pepper seasoning and the diced chilis on low for 5-6 hours or 1-2 hours on high, till meat is fully cooked.

Cut the spaghetti squash in half and bake on a cookie sheet for 25-30 minutes on 350 degrees.  Remove and let cool for about 5-10 minutes.

Once meat is done, scrape the squash out of one of the halves into the slow cooker with a fork. Stir together and heat further to warm the squash if needed or serve immediately.  The squash can be added when the meat is almost done and cooked on low for as long as needed till meat is done or your ready to serve.

Sprinkle with cheese before serving.

Makes 4-6 servings

Kaylee’s 9th Birthday Cake

Kaylee’s 9th birthday request was a Despicable Me II Minion with the fruit hat. The one eyed minion wears a fruit hat in the jelly factory and at the end dancing, and this was what Kaylee wanted.

I layered 4 different flavors of cake, using my Cake Out of a Cookie Mix idea. I used Pillsbury’s blue raspberry, orangecicle, key lime and fun fetti mixes. I spread the corresponding flavors of frosting in between the layers. Mixed up yellow frosting from my Cake Frosting recipe and frosted the outside.

Skewers or dowel sticks stuck down into all layers of the cake can help make secure.

I then mixed together blue frosting with the same recipe and added his pants using Twinkies for the legs and half ones for the feet.

The minion also where’s a coconut bra in the end with his fruit hat, so I found some white Hostess Snowballs and tinted them brown.

The goggle was made from 2 canning jar lids glued together and a piece of white foam board painted with the eye lid and pupil popped into the back of the lid.

Black tube frosting was used for the hair and strap. More Twinkies were used for mini minions around the base.

For the hat, I found a child size sombrero and glued fake fruit to it. I then lined the inside of the hat with some wax paper, waited till we got to our destination then applied the hat. Lining it with the wax paper allowed us to remove it and let Kaylee wear it.

Peanut Butter Cake out of a Cookie mix

Turn almost any cookie mix into a cake.  A challenge to figure out what people can do if they don’t have a cake mix or accidentally  bought a cookie mix by accident. My Cake out of a Cookie Mix post, has helped many solve a challenging dilemma. Enjoy this challenge made delicious. One package makes a 10″ round cake, for a layer cake you will need two to three.

Ingredients:

Instructions:

In a mixing bowl, mix together all ingredients and mix on medium till well blended.

Pour into a greased and floured 10 inch round pan. Bake for 35 minutes on 350 degrees, till toothpick inserted comes out clean.

Frost with Chocolate frosting for a wonderful peanut butter cup flavored dessert.

Baked Chipotle Flounder

Ingredients:

Instructions:

Spray oil a glass casserole and spread vegetables in bottom.  Layer fillets over veggies. Pour lemon juice over fish, sprinkle the season cubes over evenly and top with the coconut.

Bake on 300 degrees for 45-60 minutes

*you can use non toasted coconut and at the last 5 minutes of baking, turn the oven to broil and it will make the coconut toastier.
