Pesto Spaghetti Squash

Ingredients:

  • 1/2 of 1 spaghetti squash
  • fresh shredded parmesan cheese, approx. 1 cup
  • 1 pkg, 5 links of italian sausage
  • 1/2 jar of basil pesto sauce

Instructions:

Pre-heat oven to 350 degrees. Cut the spaghetti squash in half, place meat side down onto a spray oiled baking sheet.  Bake for 20 minutes. Remove from oven and let cool. Scrape the meat of the squash out into a spray oiled 8×8 glass baking dish. Pour the pesto sauce on top and toss squash till the sauce is spread through. Sprinkle the parmesan cheese on to the squash and toss.

While the squash is baking, cook the italian sausage in a pan. Cut the casings off and cook like hamburger till done. Extra seasoning like garlic, onion powder, and cayenne pepper on the sausage is a good idea but not necessary.

Once the sausage is done and the squash is prepared, drain the sausage and place on squash and toss.

Bake again on 350 degrees for 10 minutes to melt the cheese.

Spicy Meatballs

Spicy Meatballs on ramen.

The Meatballs Ingredients:

Instructions for meatballs:

A deep fryer is best for this recipe, if not use a skillet with oil and turn balls until browned all over. I have a Presto Fry Daddy with a basket and it’s wonderful and very easy to use.

Mix all the above ingredients and mix together by hand till well blended.  Form balls about 2-3 inches big, place in fryer for 2-3 minutes at 350 degrees.  Remove and drain, set aside till sauce is ready.

The Sauce:

While cooking the sauce, soak the ramen noodles in a bowl of hot tap water for 5 minutes, after softened then place in a colander, drain, and set aside till needed.

In a large pot, combine ramen seasoning, tomatoes, water and beef base. Stir and heat to a slow boil.

Add masa, sour cream, Italian seasoning, and garlic.  Stir and cook till bubbly and reduce to low heat.

Add meatballs, stirring carefully to coat meat.  Heat to reheat meat if needed. Add noodles to mix or reheat noodles if needed and serve meatballs on top of noodles.

Lasagna

family friendly lasagna without the yucky cheeses

Ingredients:

  • 1 box of lasagna noodles
  • Marinara Sauce
  • 1 pkg. of pepperoni
  • 1 lb. Italian sausage
  • 1 lb. ground hamburger
  • 2 small cans mushrooms
  • 1 large pkg. shredded cheddar/Monterey jack cheese
  • 1 large pkg. shredded mozzarella
  • grated Parmesan

Instructions:

Make sauce according to marinara sauce recipe.  while simmering, brown sausage and hamburger and drain. add mushrooms, sausage and hamburger to sauce and continue to simmer.

Cook noodles according to pkg. directions and drain.

in a 9 x 13 baking dish (can fill 15 x 11), spray with oil, place one layer noodles, spoon layer of sauce, evenly place a layer pepperoni, sprinkle layer of both cheeses.  continue this layering till you run of noodles, these will be first.  last layer should be sauce.  bake at 350 degrees for 30 minutes remove add layer of cheeses and Parmesan, return to oven and bake till cheeses are melted approx. 10 minutes.

everything should already be hot, so we only bake to melt the cheeses and heat anything not cooked.
