- Homemade tortilla chips
- 1 lb. ground pork or beef
- 1 tube of Chorizo beef or pork
- 1/2 c. masa corn flour
- 1-2 tbsp. cumin
- 1-2 tbsp. paprika
- Canned nacho cheese heated in a sauce pan or shredded Cheese to be melted in microwave once on chips.
In skillet, brown your ground meat and your chorizo, mixing well as they cook(do Not drain). Once browned, add you corn flour, cumin, paprika. Stir well and heat for about 5-10 minutes, if set for a couple off the heat any juices will be soaked up.
Place your chips on your plate, spoon meat over the chips then your cheese.
- Your Cheese of choice: I use the canned nacho cheese, like you would find on nachos at a sport event. Small cans of it can usually be purchased by the Parmesan cheese on the spaghetti isle. Otherwise if you can only find the large industrial size, it can be frozen to use only what you want at a time.
- Shredded cheese is nice, i place the plate in the microwave to melt a little more than the heat of the meat.
- Velveta can be used as well, it’s just usually cheaper to buy the nacho cheese and a heck more convenient.

The chorizo really makes these nachos RAWK.
