Scrapple in Texas ya’ll. I found this in our local meat market, it’s a mid-Atlantic concoction they eat for breakfast. A transplant to our area requested it at the meat market so they brought in some to see if they could sell it. I had seen this on t.v. and had been curious but had to this point not found any. I eyed it in the freezer at the store and snagged some and tonight we’re having it for supper. Ingredients: Pork Stock, Pork, Pork Skins, Corn Meal, Pork Livers, Wheat Flour, Pork Fat, Pork Hearts, Salt, Spices.

Pre- cooked, open then slice into 3/8″ slices. Place into pre-heated pan on medium heat for 8-10 minutes WITHOUT turning, after time, turn and brown 8-10 min. on the other side.

Suggested serving with breakfast.

When I was in the Army I knew someone from Virginia who swore this stuff was the best with eggs for breakfast. I steered clear of the stuff because it wasn’t available where we lived and, besides, it sounded nasty the way she described it.
It was actually quite good. The flavor was rather unique and I can see where it would have gone great with some scrambled eggs.

Yes it is hard to find in Texas.
The only way I found it where I live was my meat market special orders it for another customer.
She orders it by the box and freezes it, they order a few extra to sell in store.
Maybe hill country meats on 281 can find some where to order it.
