Semi Greek Chicken

  • 4 chicken breasts, thawed
  • 1 package of fresh cherry tomatoes, sliced in half
  • 1/2 c red wine vinegar
  • 1 tbsp dried oregano
  • 1 bag of fresh spinach
  • small onion diced (optional if using pan and not a grill to cook chicken)
  • one package of crumbled Feta cheese

Over night or for at least one hour, marinate the chicken in the vinegar and oregano.

Grill or pan grill (slightly oiled pan) chicken for 12-15 minutes, turning 1/2 through. If using a pan, throw in onion to caramelize while chicken cooks.

Once chicken is done, move to a plate and keep warm.

On grill or in same pan, cook tomatoes till tender, add a little bit of dried oregano over top while cooking.

Set tomatoes aside or while they cook in another pan place fresh spinach to cook, sprinkle with red wine vinegar just to moisten. cook till all moist and reduced.

Plate spinach, then chicken and onions, then tomatoes around.

Sprinkle with feta cheese.eBags, Inc.
