Stuffed Peppers

  • 4 sm. – med. pork chops or ground pork
  • 4 large Anaheim peppers
  • 3 green onion stalks
  • 1 tbsp. minced garlic
  • 2 tsp. cajun seasoning
  • 3/4 c bread crumbs
  • 2 tsp. cumin
  • 2 tsp. paprika

De-bone 4 small – medium pork shop and cut into small pieces.

Place in food processor with chopping blade.

Add 3 green onions, tbsp minced garlic, 2 tsp cajun seasoning.

Chop till well ground up and blended.

Place into bowl, add 3/4 bread crumbs, 2 tsp. cumin, 1 tsp. paprika and blend well with hand.  Set aside.

Wash 4 Anaheim peppers, cut off stem end, slit down side and remove seeds.

Spray a glass dish with spray oil, stuff the peppers and place into pan.  Bake at 350 degrees for 35 minutes.  Remove and sprinkle with shredded cheese and return to oven for another 5-10 minutes or until cheese is melted.eBags, Inc.

    I’m usually not a fan of stuffed peppers, but these were outstanding. The filling is excellent and the Anaheims are a better choice than the usual green bell pepper.
